1 package boil-in-a-bag rice (to yield 3 cups cooked)
1 lb. lean ground sirloin
1 cup onion, chopped
1 green pepper, chopped
¼ cup ketchup
1 tablespoon chili powder
2 teaspoon cumin
½ teaspoon thyme
½ teaspoon oregano
1 (14½ -ounce) can diced tomatoes with green chilies
2/3 cup sour cream
½ cup scallions, chopped
¼ cup skim milk
Preheat oven to 400.
Cook the rice according to the package instructions.
Combine the sirloin, onion and green pepper in a non-stick skillet and cook, stirring, for 4 minutes or until the beef is browned and crumbled.
Add the ketchup, chili powder, cumin, thyme, oregano and tomatoes and simmer, stirring occasionally for 10 minutes.
In a baking dish, combine the cooked rice, sour cream, scallions and milk.
Spoon the beef mixture over the rice. Bake for 10 minutes.
Let casserole stand for 5 minutes before serving. S J Gresham
